Valdeon cheese is a Spanish blue cheese, made in Posada de Valdeon, in the Castile-Leon region of the northwestern Spain. It is a rich, creamy, intensely-flavored cow and goat’s milk blue cheese, saltier than Stilton yet not as yellowed or as biting as its cousin Cabrales. It is wrapped in sycamore maple or chestnut leaves before being sent to market, which contributes to their distinctive appearance and complex flavor.
