A soft and firm cheese from Lombardy, Taleggio is as incredibly delicious as it is versatile. Possibly one of the oldest soft cheeses, it has a strong smell but its flavor is comparatively mild with an unusual fruity tang. Its crust is thin and studded with salt crystals. From the cheese board to the kitchen, it has something to offer in all the culinary arenas. Particularly good when melted! You can incorporate this to creamy risottos in place of Parmigiano or Grana Padano (incidentally, both from the same region). The flavor and texture are somewhat comparable to a Port Salut, fresh, but with a particular aftertaste which is why this is a good cheese to pair with buttery crackers and sweet fruits like apples and figs. Peel or cut the rind away as it is not very palatable.
