Gorgonzola “Dolce” is a sweet cheese, which is where it gets its name from, it’s made with uncooked cow’s whole milk. The rind is hard and grey in color but not edible. Sweet and not pungent at all due to its sour cream composition. This Italian pasteurized blue cheese is veining and sweet with a delicate flavor. The texture is creamy, very creamy. Paired well with Tuscan Vin Santo or Champagne.
