Hand rubbed with Bella Bella’s propierary spice blend, and slowly cooked in Rendered Duck Fat until the meat is tender and about to fall off the bones. The confit is prepared in a centuries-old process of preservation that consists of salt curing a piece of meat and then cooking it in its own fat.
