Also called the ‘cranberry’ bean, the Barlotti bean is a versatile and beautiful bean — having a tan exterior with red or russet coloured streaks. It has a flavor described as slightly sweet, having a smooth, even texture. Beans may be cooked in broth with herbs with seasonal vegetables, and are excellent with both veal and poultry.
