Description

Annatto seeds, or roucou, are the reddish round seeds of the Achiote tree which originates from South America. These pungent red seeds can be used both whole or ground. When ground they can be used as a food coloring or as a component in spice pastes or spice mixes as it has peppery, nutmeg like flavor. They are used to import a bright golden color to oils, rice dishes and meats, lending a tangy flavor as well.
