Les vergers Boiron have chosen the Alphonso mango variety grown in India, known for its superior flavor and color. It is harvested green. Canes are used to knock the fruit down from the mango trees. They are left to mature in straw which acts like a maturing chamber. Then the mangoes are individually hand picked.
